In the workshop of Villa Gioielli Noto, products take shape from a direct bond with our land and its natural rhythms. Our extra virgin olive oil is at the heart of this project: a sincere expression of the olive trees that surround the villa and of land cultivated with care. Alongside the oil, the Noto almonds also tell of an authentic Sicily, shaped by seasons, care and mindful choices.
Our agricultural work involves local people, whose experience and knowledge help preserve the value of a process carried out with respect. Every product carries with it origin, quality and authenticity.

How our certified products are made
Behind our products is a process made of care, patience and considered choices. Everything begins with the harvest, when the fruit reaches its finest balance, and continues with processing, pressing and bottling, in a supply chain carefully followed from field to table. Our commitment is confirmed by organic certification and by a technological laboratory, where tools and expertise allow us to monitor every stage, ensuring quality, authenticity and respect for the land.
Olive harvesting
It all begins among the olive trees, when the olives reach the right moment to be harvested. It is a delicate stage, made of care and sensitivity, in which the fruit is picked at its finest balance.
Processing and pressing
After harvesting, the olives are carefully processed and transformed into oil, in a process that preserves the richness of the fruit and brings out its aroma, colour and character.
Bottling
The oil is bottled with care, ready to reach the table as an authentic expression of the land, the season and the work that made it possible.
Our almonds
Our almonds from Noto, a Slow Food Presidium, come from careful and respectful cultivation.
Harvested and selected with care, they retain their aroma, texture and full, natural flavour. They are an essential product that tells the story of the land in its simplicity.
The Workshop
The workshop is the place where what is born finds its fullest form. Here, we follow every stage with care, from the raw ingredient to the finished product, with a simple and respectful approach that preserves its characteristics.
